Mango Kulfi | Quick Mango Kulfi | Mango Kulfi in 5 minutes | No Cook No Churn Mango kulfi

Mango Kulfi is perfect delight for summer days. This is a quick and easy mango kulfi recipe. It do not need any special ice cream machine, just a simple blender works fine. 

This kulfi can be made using fresh mangos or canned mango pulp. If using fresh mango use 1/4 cup of sugar to the recipe. It tastes best with cardamom and saffron, awesome combination of flavor for a dessert


Ingredients : 

Mango pulp (canned) - 1cup
Condensed milk - 1/2 cup
Heavy whipping cream - 1/2 cup
Milk - 1/2 cup
Saffron - 1 teaspoon 
Cardamom pod - 1 teaspoon

Special Gadgets needs : 

Popsicles mould/ Kulfi mould 
Popsicles sticks

 


Procedure : 

1. In a blender add 1 cup mango pulp, 1/2 cup condensed milk, 1/2 cup heavy whipping cream, 1/2 cup whole milk, 1 tsp saffron and 1 tsp of cardamom pods and blend till think and creamy.

2. Pour the mixture to a jar and add some chopped pistachios and mix in.

3. Fill in the kulfi mould, cover the top with a small piece of foil and make a small slit and insert a popsicle stick. 

4. Freeze for 5 hours. 

5. To remove kulfi from mould, dip the mould in hot water and twist and remove from mould and sprinkle some chopped nut and enjoy.


Notes: 

1. If using fresh mango pulp, Add 1/4 cup of sugar to the original recipe

Mother’s Day Cakesicles | Cakesicles | How to make Cakesicles

Cakesicles are bigger size cake pops. They are perfect for any occasion and can be customized as per the event. I made some pink color candy decorations with mother's day theme.

Usually cakesicles are made with cake and icing. I did not have icing at home, so made some chocolate ganache and mixed with cake to form cake dough.



Ingredients : 

Any cake - home baked or Store bought 
White chocolate wafer / white chocolate chips / candy melts 
Chocolate ganache (melt 1/4 cup chocolate and 3 tbsp cream) 
Candy decorations / sprinkles 

Special Gadgets needs : 

Cakesicle mould 
Popsicle sticks

 


Procedure : 

1. Use a any cake either homemade or store bought cake. Crumble the cake without big chunks 
2. Prepare a ganache but melting chocolate chips and heavy cream  
3. Put the ganache over the crumbled cake and start mixing it until it forms a dough like texture  
4. Melt your Chocolate or Candy Melts  
5. Add about a spoonful of melted chocolate into the mold. You can use a spoon, small offset spatula, a pastry brush to coat the mold. Make sure to get the sides of the mold and coat completely to create a chocolate shell.  
6. Insert the popsicle stick. Refrigerate atlest for 15 mins 
7. Remove from refrigerator and paying extra care not to break your chocolate, press your cake filling into the cavities of the mold. Leave a thin gap for final chocolate coating. Refrigerate for 10 mins 
8. Remove from refrigerator and cover the top of the mold with additional chocolate. Refrigerate for 10 mins until the chocolate sets.  
Carefully loosen one of the corners of your mold and then peel the mold from the top to remove the entire cakesicle. Carefully push the sticks out of the mold.  
9. If any extra chocolate is on the outer rim of your cakesicle, use a paring knife to carefully trim the chocolate off.  
10. Decorate cakesicle as needed. I have used homemade Mother’s Day theme candy melts decorations, edible luster dust and a drizzle of candy melts
