Ginger Lemon Scones

These are very simple eggless scone recipe. The flavors of ginger and lemon so are refreshing and clean.....

This is one of the best baked goodie for my vegetarian friends. I got this recipe from a baking cookbook and tried it for a fist time, It turned out to be so good and everybody loved it so much. So I thought of sharing it to all my blog friends.

I love to use the crystallized ginger in my baked goodies. They add so much of flavor and freshness. One of my favorite is the crystallized ginger cookies. They are so good. Will the share the recipe soon. I think crystallized ginger is for health. They are so fibrous and good for digestion.



Ingredients :


All purpose flour - 2 cups
Granulated sugar - 1/4 cup
Baking powder - 1 teaspoon
Baking soda – 1/4 teaspoon
Salt – ¼ teaspoon
Unsalted butter, cold and cut into pieces – ½ cup
Crystallized ginger, chopped into small pieces – 3/4 cup
Zest of 1 large lemon
Heavy cream – 2/3 cup or less


Lemon Glaze:
Powdered sugar – 1 cup
Lemon juice – 1 tablespoon or more

Procedure : 

Preheat oven to 350 degrees.

1. In a food processer combine flour, sugar, baking powder, baking soda and salt. Pulse it 3 to 4 times. Add cold butter to the mixture and pulse it 3 times. The mixture should look like coarse crumbs. Add the crystallized ginger and lemon zest to the mixture.
2. Now add the cream and mix it very slowly (the cream should be cold) till it forms a dough. Almost like cookie dough. It should not be runny. So control the quantity of the cream.
3. Now move the mixture to a floured surface and knead it slightly and pat it to a circle about an inch thickness.
4. Now cut the circle into half, then in quarters, continue till it forms wedges.
5. Arrange the scones on a baking sheet. Brush the tops with some egg wash (1 egg+1 tablespoon milk) or to make it as a vegan version heavy cream can be used.
6. Bake for 25 mins. Remove the scones from the oven. Let it cool completely. In the meanwhile, Wisk together the powder sugar and lemon juice. It should be pourable. Drizzle the glaze on the scone and let it set.

Good News

Hi all…..
Wondering where did I vanished for so long?????????




 
It’s all good news. This mother’s day went so special for me, as I am a mom now. Yes, Nov 18 2009 we were blessed with an adorable baby boy. We named him RUSHIL GUHAN RAMKUMAR. 
So as u all know so many things were going on around me and kept me very busy, so was not able to post about this.

Rushil is keeping me very busy, so hope I will find time to continue my blogging.
