Sooji Appam | Ugadi Special

Sooji Appam is a Traditional Indian sweet made for Ugadi. In my house every year for Ugadi it's a tradition to made sooji appam and pooran poli. Both are awesome sweet which are mouthwatering. 

This year I have made Sooji Appam for making this Ugadi special day. This is basically a sooji halwa stuffed inside poori and deep fried. My grandma adds kova to the filling to make it extra special and rich. 



Ingredients :

Maida - 1 cup

Salt - 1/4 tsp

Ghee - 1 tsp

Water

Oil for deep frying 


Filling:

Rava / Sooji - 1/2 cup

Sugar - 1/2 cup

Hot water - 1 cup

Cardamom powder- 1/2 tsp

Saffron - 1 pinch





Procedure : 

Fry 1/2 cup sooji / rava with 1 tsp ghee until light brown color.



Add 1 cup boiling water and cook completely.



Add 1/2 cup sugar and mix well. Use a wisk to break the lumps.



Crush and add 1 pinch of saffron and 1/4 tsp cardamom, mix well




In a bowl add 1 cup maida , 1 tsp ghee, 1/4 tsp salt and mix well



Add water little by little and make slightly sticky dough.



Add 2 tsp of oil and mix the dough for at least 5 mins



Knead the sooji halwa and make small rounds.



Make small dough balls, they must smaller than sooji rounds.



Cut open a ziploc bag and grease it well with oil.



First flatten the dough.



Place sooji filling and pull the dough to cover it and make a round.



Flatten the round a bit and cover it with ziploc and roll it flat.



Remove the plastic wrap and flatten it more with hands.



Remove the appam from plastic wrap and carefully drop in hot oil.



Fry both sides till light golden brown.



Remove from oil and drain on paper towel.

Peeps House for Easter | Bunny hut | Royal icing without Meringue powder

Easter is colorful festival after 6 long winter months. When we say Easter bunnies, chicks and Easter eggs are the ones which comes first to my mind. They looks so cute and colorful. 

I have made Bunny hut to celebrate Easter this year. Kids enjoyed making this bunny house. I have used graham crackers to make this house. Next I have royal icing to glue the graham crackers. I have used corn syrup to make royal icing. 



Ingredients :

Graham crackers - 3 large pieces 
Peeps Marshmallows 
Sprinkles 
Easter / Pastel color M&Ms Royal icing

Royal Icing without Meringue powder:

Icing sugar - 1/2 cup 
Corn syrup - 1/2 teaspoon 
Vanilla extract - 1/2 teaspoon 
Water - 3 to 3 1/2 teaspoon

Special equipment needed:

Pipping bag 
Small round tip (Wilton #2) 




Procedure : 

Mix 1/2 cup powder sugar, 1/2 tsp corn syrup, 1/2 tsp vanilla, 3 to 3 1/2 tsp water and mix until it forms a thick paste. 



Fill in the icing into piping bag with small round tip. 


Cut 3 big graham cracker into half to get 6 pieces. Now cut 1 half of the cracker into quarter. Now cut one of the quarter piece across to make a triangle shape. 



First pipe royal icing on the side and attach the triangle. This is back of the house. 



Pipe icing on the next to pieces and attach to form roof. 



Next attach the sides of the house. Let it dry for 30 mins. 



Now decorate the roof with M&M's. 



Now place the house on a plate and keep the peep inside the house and decorate it with sprinkles.

Who wouldn’t like some warm waffles for breakfast. Its my all time favorite. My kids are big fan of Nutella which made me to combine with waffle and made these wonderful Nutella Waffles.🌹🌹🌹🌹 To stick on to the theme I have made them in small heart shape. Love those tiny waffle makers out there in various shapes. I bought this heart shape waffle maker a few years back and have been making heart waffles for kids during the month of feb ♥️❤️♥️❤️ 


Ingredients :  

Nutella - 4 tablespoons 
Butter - 2 tablespoons 
All purpose flour - 1 cup 
Baking powder - 1 teaspoon 
Eggs - 2 separated 
Milk - 1 cup 
Vanilla extract - 1 teaspoon 
Salt - 1/4 teaspoon

Equipment needed:

Heart shape waffle maker / Regular waffle maker



Procedure : 

In a small sauce pan start melting 2 tablespoons of butter Add 3 tablespoons of Nutella to the butter Melt everything until mixed well together 



Add 1 cup milk Separate 2 eggs and add the yolks to the milk bowl Add 1 teaspoon vanilla extract Add the melted Nutella and butter mixture and mix till combined Add 1 tablespoon of sugar and mix to dissolve 


 In another bowl add 1 cup flour, 1 tsp baking powder, 1/4 tsp salt and mix. Now pour the Nutella mixture to the dry flour and mix well




Whip the reserved egg whites until stiff peaks formed Fold in the egg whites gently until combined





Heat the waffle iron.  Once hot pour the batter and and close to cook Once cooked / light turned off  remove the waffle Decorate with powder sugar and strawberries
