Sooji Appam | Ugadi Special

Sooji Appam is a Traditional Indian sweet made for Ugadi. In my house every year for Ugadi it's a tradition to made sooji appam and pooran poli. Both are awesome sweet which are mouthwatering. 

This year I have made Sooji Appam for making this Ugadi special day. This is basically a sooji halwa stuffed inside poori and deep fried. My grandma adds kova to the filling to make it extra special and rich. 



Ingredients :

Maida - 1 cup

Salt - 1/4 tsp

Ghee - 1 tsp

Water

Oil for deep frying 


Filling:

Rava / Sooji - 1/2 cup

Sugar - 1/2 cup

Hot water - 1 cup

Cardamom powder- 1/2 tsp

Saffron - 1 pinch





Procedure : 

Fry 1/2 cup sooji / rava with 1 tsp ghee until light brown color.



Add 1 cup boiling water and cook completely.



Add 1/2 cup sugar and mix well. Use a wisk to break the lumps.



Crush and add 1 pinch of saffron and 1/4 tsp cardamom, mix well




In a bowl add 1 cup maida , 1 tsp ghee, 1/4 tsp salt and mix well



Add water little by little and make slightly sticky dough.



Add 2 tsp of oil and mix the dough for at least 5 mins



Knead the sooji halwa and make small rounds.



Make small dough balls, they must smaller than sooji rounds.



Cut open a ziploc bag and grease it well with oil.



First flatten the dough.



Place sooji filling and pull the dough to cover it and make a round.



Flatten the round a bit and cover it with ziploc and roll it flat.



Remove the plastic wrap and flatten it more with hands.



Remove the appam from plastic wrap and carefully drop in hot oil.



Fry both sides till light golden brown.



Remove from oil and drain on paper towel.
