Basundi

Basundi is a traditional Indian dessert from Maharashtra. It is basically thickened milk flavored with cardamom powder and saffron. It is served on its own as a dessert or with puri.

This is a very rich dessert which can be made with few ingredients at home and the process is as simple just reducing the milk and breaking the milk skin and mixing with the milk. 




Ingredients :

Whole Milk / Full Fat Mil - 5 cups
Sugar - 1/3 cup
1 Pinch Saffron soaked in 2 tablespoon warm milk 
Elachi / Cardamom Powder - 1/2  teaspoon
Pistachio / Pista - For Topping
Yellow Food Coloring - 2 drops (Optional)


Procedure : 

Take milk in a heavy bottom pan and bring it to a boil.

Soak Saffron stands in 2 tablespoon of warm milk.

Once milk boils it will start form skin on the top, use a whisk to break the skin and mix with milk.

Reduce the milk until it becomes thick (5 cups must be reduced to 3 cups).

Next sugar, saffron milk and food coloring (if using) and allow it boil few mins.

Lastly add cardamom powder and turn off the stove.

Refrigerate Basundi and while serving top it with Pista nuts



Note : Once cooled / chilled Basundi will become more thick so turn off the stove accordingly

Lemon Yellow Food coloring can be added to make Basundi more presentable, it totally optional
